Hints of aromatic herbs such as rosemary, thyme, sage and peppermint are combined with light nuances of yellow-fleshed fruit. Aries Pecorino's marked acidity is enhanced with a savoury and mineral finish. The grapes are pressed softly and fermented in stainless steel vats. When fermentation ends a small part of it is moved in 2009 French oak tonneaux for a short elevation of three months.

The first Ciavolich winery was built in 1853 in Miglianico by Francesco Ciavolich opposite his private residence. Over the years the wine production started to take place in Loreto Aprutino in the province of Pescara. Today the Ciavolich winery is one of the most ancient and suggestive in Abruzzo. Nowadays Chiara Ciavolich continues cultivating the work of her ancestors passing on an ancient history throughout wine, a red thread connecting past, present and future. Cultured grape varieties include Montepulciano, Trebbiano and Pecorino.
